Альфонсо Эрнандес-Ката, первый великий кубинский мастер рассказов, в начале XX века написал историю, в которой ветеран в разговоре со своими детьми вспоминает случай времен Войны за независимость. Прежде чем приступить к рассказу, он велит им поесть ахиако. Так в текст привносится мотив кубинизма. Ахиако считается квинтэссенцией кубинской кухни, поскольку включает в себя такие местные корнеплоды, как юкка (англичане называют ее кассавой), батат (белый сладкий картофель) и маланга (клубень, напоминающий таро), африканские растения, например ямс и плантан (овощной банан), а также европейские сорта мяса. Одна из надписей на голубых стенах «Ла-Бодегиты» гласит: YO MI APETITO SOLO APLACA EN LA MESA EN QUE BRILLA UN BUEN AJIACO — «Мой аппетит пробудит лишь тот стол, где красуется хорошее ахиако». Многие сравнивают Ахиако с испанским «косидо» (cocido español), итальянским «минестроне», славянским борщом, чилийской «каcуэла» (cazuela chilena), доминиканским «санкочо» (sancocho dominicano)… В зависимости от ингредиентов и местных традиций, различают несколько видов Ахиако, но в своем классическом виде этот суп включает свинину или говядину, вяленое мясо, бананы овощные, юкку, тыкву и другие кубинские корнеплоды и овощи, все это в крепком бульоне и приправленное лимоном и острым перцем... Креольский ахиако -Ajiaco a la criolla Ингредиенты на 5 человек: Вяленое мясо (tasajo) 145 г Мясо свиной головы 145 г Сало 87 г Банан полуспелый 190 г Маланга (malanga) – кубинский корнеплод 190 г Кукуруза молочной спелости 220г Тыква 220г Маниока (boniato) 220г Соус креольский 75г Соль 40г Растительное масло 58мл Вода 2,5 литра Приготовление: Вымочить кусок вяленого мяса в течение 12 часов приблизительно. Промыть хорошо голову свиньи. Отварить кусок вяленого мяса в воде в течение 30 минут, добавить свиную голову и варить до готовности. Потом извлечь мясо и остудить, разрезать кусок вяленого мяса на 5 частей. Процедить бульон, поставить его вновь на огонь и отварить сначала кукурузу в течении 45 минут, а затем добавить остальные овощи, порезанные на куски размером 3-4 см, и варить до размягчения всех овощей и корнеплодов. Порезать свиное сало соломкой, поджарить его слегка в растительном масле, перемешать с креольским соусом и добавить все это вместе с вяленым мясом и мясом свиной головы к ахиако, доваривая в течении еще 10 минут.
